Yummy Breakfast Rolls

  • 2 8-oz. tubes crescent rolls
  • 2 8-oz. pkgs. cream cheese, softened
  • 1 1/4 cups sugar, divided
  • 1 teaspoon vanilla extract
  • 1/2 cup margarine, melted
  • 1 teaspoon cinnamon

Unroll one can of crescent rolls into the bottom of a 13"x9" pan. Don’t press seams together! Mix cream cheese with one cup of the sugar and vanilla; spread over the rolls. Place second can of crescent rolls over top. Pour on melted margarine and top with mixture of 1/4 cups sugar and the cinnamon. Bake for 30 minutes at 350 degrees.

Once baked the rolls can be cut along the lines of the crescent shaped triangles. Cut in half again. These are rich.

  • 1 – 16oz carton sour cream
  • 1 bag of colored mini marshmallows
  • I – 16oz can of fruit cocktail
  • I small (4-6 oz?) can of pineapple (tidbits, chunks, or crushed)
  • Coconut flakes, if desired
  • Chopped walnuts, if desired

Drain fruit cocktail and pineapple. Place sour cream, fruit, and marshmallows in a bowl and stir together. Add the desired amount of coconut flakes. Refrigerate until ready to serve.

You can add any kind of fruit that you want, like canned mandarin oranges, bananas, or fresh seasonal fruit.

Turtle Pretzels

Buy a bag of Holiday Pretzels, the small round ones

Buy a bag of Rolo candies. These are chocolate with caramel in the center.

Cover a cookie sheet with aluminum foil and lay out 48 (or whatever fits), pretzel circles. Unwrap the Rolo candies and put one inside each pretzel. Sometimes the top fits better pointing down.

Heat the oven to 275 degrees and bake them for 3 minutes. Take them out and immediately press down a half pecan or whole cashew onto the soft chocolate. Put the cookie sheet in the refrigerator for about a half hour or until they get firm. YUMMY.

If you are unable to find a bag of Rolo candies, you can buy the little bite size Snickers or Kisses or perhaps other chocolate/caramel candies with the same results.

Yes, this snack is really for people!

  • 9 cups of a Chex brand cereal – your choice, or mix and match, from Corn, Rice, White or now even Chocolate Chex cereal
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup peanut butter
  • 1/4 cup butter or margarine
  • 1 teaspoon vanillas
  • 1 1/2 cups powdered sugar

*Healthy Option: unrefined sugar (Sucanat or Rapadura)

Pour your cereal into a LARGE bowl and set aside.

In a one-quart bowl, microwave the chocolate chips, peanut butter, and butter on high for about 1 minute. Stir. Everything probably isn’t melted yet, so continue to microwave in 30 second increments, stirring after each time. When the mixture is smooth and melted, put in the vanilla. Pour this mixture over the Chex cereal, stirring until everything is well coated. Using a 1 or 2-gallon food-storage bag, pour in your coated cereal, leaving room to shake. Add powdered sugar according to how much cereal you have in the bag. (half of the cereal, then use half of the powdered sugar.) Shake until well coated. Spread out on waxed paper to cool. You want to get your coating done quickly so the chocolate is still sticky. Store in an airtight container.

Four Bean Delight

  • one-half pound or approximately 8-10 lean bacon strips, diced
  • 2 medium onions, quartered and sliced
  • one-half cup brown sugar
  • one-half cup vinegar
  • one-half cup ketchup
  • 1 tsp. salt
  • 1 tsp. ground mustard
  • one-half tsp garlic powder
  • 1 16 oz. can baked brown beans, undrained
  • 1 16 oz. can kidney beans, rinsed and drained
  • 1 16 oz. can butter beans, rinsed and drained
  • 1 16 oz. can navy beans or green beans, drained

Note – some cans are only 14 oz. now but that’s fine. You may choose to add one more can of any of the beans to make it go further.

In a skillet, cook the bacon pieces until crisp. Drain and reserve 2 T. drippings. Set bacon aside. Sauté onions in bacon drippings until tender. Stir in brown sugar, ketchup, vinegar, salt, mustard and garlic powder. Simmer uncovered for 15 minutes or until onions are golden brown. Combine the beans in a slow cooker. Add onion mixture and bacon and mix well. Cover and cook on low for 6-7 hours.

This recipe is a great item to serve at a picnic or any kind of gathering and it is very good for you.

Veggie Snack Squares

  • 2 pg. Pillsbury crescent rolls
  • 2 (8 oz.) cream cheese
  • 1 c mayonnaise
  • 1 pkg. ranch-style dry dressing mix
  • 2 c. fresh broccoli
  • 2 c. fresh cauliflower
  • 1 c. thinly sliced carrots
  • 1 bunch green onions
  • 1 c. thinly sliced red or green peppers

Spread dough into full-sized baking sheet, approximately 19" x 17" and bake according to package directions. Cool.

Beat the cream cheese until fluffy and add the mayonnaise and dressing mix. You may sprinkle garlic powder and pepper over this layer if desired. Spread over cooled dough. Chop the vegetables into small pieces and mix well. Spread evenly over cream cheese mixture. Cover and refrigerate approximately 1 hour or more. Cut into desired shapes and serve chilled.
