Ruth’s Oatmeal Bars

  • 2/3 cups butter, softened
  • 1/4 cup peanut butter (you can use creamy or crunchy)
  • 1/4 cup light corn syrup (you can use dark if that’s all you have)
  • 1 cup brown sugar (packed)
  • 1 teaspoon vanilla
  • 4 cup oatmeal (you can use either the old fashioned or quick)

Mix everything together and press lightly into an 11" x 13" pan. The firmer you press it into the pan the harder the bars will become. Bake in a 350 degree oven for 12 minutes or lightly browned. Do not over bake or the bars will be hard! In a saucepan or microwave, melt 2 cups chocolate chips and ½ cup peanut butter. Spread over your bars.

Ruth said the recipe also works if you don’t have time to bake it! I am keeping this recipe on my refrigerator!
