Village Pancakes

  • One cup all-purpose flour
  • One-half teaspoon salt
  • One Tablespoon sugar
  • One cup sour cream
  • One cup small curd cottage cheese
  • Four eggs, beaten until foamy
  • One-half teaspoon pure vanilla

Stir together flour, salt and sugar. Add sour cream, cottage cheese and eggs and gently beat until flour mixture is moistened. Drop by one-fourth cup portions, well apart, onto a hot, oiled griddle. Bake until bubbles break; turn and brown other side. Serve with your choice of syrup or fresh fruit with whipped cream. Makes 16 four-inch pancakes.
