Nutty Veggie Salad

  • 1 and one-half cup chopped cauliflower
  • 1 and one-half cup chopped broccoli
  • 2 cups fresh snow peas, cut into thirds
  • one-half cup chopped celery
  • one-fourth cup chopped green onions
  • one-half to three-fourths cup low-fat sour cream
  • one-half to three-fourths cup low-fat ranch salad dressing
  • 4 bacon strips, fried and chopped
  • one-half cup chopped cashews

Combine all the vegetables and set aside. Mix the sour cream and salad dressing and pour over the vegetables. Sprinkle the top with bacon and cashews. Refrigerate.
