Minnesota Potato Salad

(I live on the Minnesota side of the Red River)

  • 1 cup mayonnaise
  • 2 T. vinegar
  • 1/4 cup whipping cream
  • Blend together well and add:
  • One and one-half tsp. salt
  • 1 Tablespoon sugar
  • 1 tsp. dried mustard
  • 4 cups cooked, cubed, peeled potatoes. I usually cook potatoes with peelings still on.
  • 1 cup finely diced celery
  • 1/2 cup finely chopped onion (I like the sweeter onions)
  • 3 hard-cooked eggs, chopped. Mix into the salad and save a half egg to slice on the top of the salad.

Sprinkle with paprika

Cool for several hours so the flavors blend together before serving.
