Wild Rice Fruit Salad

  • 1 cup rinsed wild rice, boiled in 4 cups of water for 45 minutes

Let rice stand for 40 more minutes, then drain and cool

  • 1 – 16 oz. can mandarin oranges drained and dried with a paper towel
  • 1 – 16 oz pineapple tidbits drained and dried with a paper towel
  • 3 oz maraschino cherries – drained and patted dry
  • One cup grapes – green or red – cut in half
  • One cup sliced fresh strawberries

Mix together and sprinkle one small box of orange jello mix into the fruit

Fold in one 13 oz Cool Whip and mix well

Sprinkle top with coconut

Refrigerate

Makes about 12 cups of salad

Special note: If you prepare this a day ahead of time, do not add the Cool Whip or coconut until the next day. Before you add the whipped topping, drain off excess fluid that has accumulated overnight.
