Chicken Supreme

  • One pound boneless, skinless chicken breast meat
  • 1 can cream of chicken and mushroom soup (or just one can of either Chicken or Mushroom soup)
  • Three thick-sliced lean bacon strips
  • One-half cup sour cream
  • One cup shredded cheddar cheese
  • One-fourth cup Craisins
  • One-fourth cup sliced almonds (optional, but we like almonds)

In the microwave, cook the bacon between paper towels until done, but not crisp. Wrap the bacon around the chicken pieces. Place in a greased baking dish. Combine the soup, sour cream, cheese, and Craisins. These are dried cranberries, like raisins and come packaged like raisins. Pour this mixture over the chicken/bacon and spread evenly. Salt and Pepper as desired. Cover with foil.

Bake at 45 minutes in 350 degree oven. Sprinkle the sliced almonds over the top and bake for 5 more minutes.

I served this with green beans and this rice dish.
