Chicken Pita Bread Sandwiches

Cook two chicken breasts so you have about two and a half cups of diced chicken. Cook and cool ahead of time.

In a large bowl, combine the cooked chicken pieces with:

  • one cup of plain low fat Yogurt
  • one-fourth cup chunky salsa
  • one-half cup finely chopped red or green pepper
  • one-fourth cup finely chopped fresh cilantro or parsley
  • one-third cup finely chopped green onions
  • one-half teaspoon ground cumin

Stir together and refrigerate overnight or for one to two hours so flavors blend.

Cut Pita bread rounds in half and fill with chicken mixture. Top with your choice of toppings like shredded lettuce, shredded Cheddar cheese, chopped tomatoes, ripe olives, black beans, crushed tortilla chips, etc. Be creative!
